Ingredients For winter citrus salad

  • DRESSING
  • 2/3 c
    plain yogurt
  • 1/4 c
    extra virgin olive oil
  • 2 Tbsp
    red onions, finely chopped
  • 1 Tbsp
    pomegranate molasses
  • 1 Tbsp
    honey
  • 1/2 tsp
    ground rosemary
  • freshly ground black pepper, to taste (i always use mixed peppercorns)
  • 1/8 tsp
    ground himalayan sea salt
  • SALAD
  • 4-5 lg
    leaves kale, washed and drained
  • 1 lg
    carrot, peeled
  • 1 md
    grapefruit, peeled, pith removed and segmented
  • 1 lg
    mandarin, peeled, pith removed and segmented
  • 1 md
    navel orange, peeled, pith removed and segmented
  • 1 lg
    kiwi fruit, skin removed and wedged
  • 1/2 c
    crumbled feta cheese
  • 2 Tbsp
    pomegranate seeds
  • 2 Tbsp
    slivered almonds, toasted

How To Make winter citrus salad

  • 1
    To make the dressing: In a mixing bowl, combine all ingredients and whisk until well blended. Transfer to the refrigerator for 2 hours.

    Place all the ingredients on a plate in order; drizzle dressing over sprinkle toasted slivered almonds. Serve 2
