Ingredients For watermelon salad

  • 4 cups seedless watermelon, cut into 2 inch pieces
  • 1/2 cup thinly sliced red onion
  • 1 large tomato, chopped
  • 1 avocado, chopped
  • 1/2 cup macadamia nuts, chopped
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 2 tbsp finely chopped cilantro
  • LIME DRIZZLE
  • 1 1/2 limes, large, juiced
  • 1 - 2 tsp sugar, optional
  • 1/2 cup plain yogurt

How To Make watermelon salad

  • 1
    In a small bowl add the lime juice, sugar and yogurt. Mix well and set aside until needed.

    In a large bowl add the following ingredients: watermelon, red onion, tomato, avocado and macadamia nuts. Mix gently.

    Season with the salt, pepper and cilantro. Gently toss the salad and serve.

    Garnish with the Lime Drizzle.
