This goes well with my Colorado Sloppy Joes, is easy to make and tastes delicious! Like it all on it's own for lunch:)

Ingredients For walnutty coleslaw

1/2head chinese cabbage or bok choy, sliced
-
1/2head red or purple cabbage, shredded
-
1-2gala or green apples, seeded, and chopped fine
-
2stalks celery, washed trimmed, and finely chopped

2carrots, grated
-
1/2red onion
-
1/2 tspcelery seed
-
1/2 tspcoarse salt (or to taste)

1/2 tspstone ground mustard
-
3/4 creal mayonaise
-
1/4 crice vinegar
-
1/4 csugar (i tasted mine and added a sprinkle more at the end)

1/2 cfinely chopped walnuts or almonds
How To Make walnutty coleslaw

1Take the last 6 ingredients--without the nuts- and combine stirring well to make dressing.

2Combine the veggies and chopped fruit -mix well.

3Add the dressing and nuts in layers to the veggie, fruit mixture to incorporate well.

4Refrigerate at least 2 hours to chill well--and enjoy!
