virginia baked / ham salad

This was my quick lunch. Could easily feed two. I like ham salad, and especially with good ham. I buy blocks of Virginia Baked Ham and use it for this, and chop it up in my chef salads. You could easily double the recipe for more servings. Normally I add a hard boiled egg, didn't have any prepared to use today. This took a total of 5 minutes to whip together... Enjoy! My photos

Ingredients For virginia baked / ham salad

  • 4 oz
    ham. i use virginia baked from deli
  • 1 tsp
    ground dry mustard
  • 1 heaping Tbsp
    sweet onion, minced or chopped
  • 1 oz
    sharp white american cheese, small cubed - use whatever kind you prefer
  • 2 heaping Tbsp
    mayonnaise dressing
  • 1 sm
    pickle, sweet or dill. i used dill
  • pepper
    to taste
  • 1
    boiled egg, chopped fine ( optional )
  • pinch
    dried dill weed (optional)

How To Make virginia baked / ham salad

    Place ham, pickle, onion and egg if using into food processor. Pulse till all is chopped fairly fine.

    Scoop into bowl, add cheese, mayo, mustard , egg, pepper and stir until well combined. Eat with greens on a plate, or use in a sandwich. It's delicious either way. I have this typically for a low carb lunch. Enjoy!

    I have also spread this on buns, and broiled in the oven, the cheese melts and makes it a delicious ham salad melt sandwich..
