This is a fresh cool summer salad that packs a bit of heat. You can use any combination of veggies you want anything fresh from the garden. I have made this salad with many different kinds of veggies. Always delicious.

Ingredients For vietnamese spicy shrimp and veggie noodle salad

  • 8 oz
    vermicelli rice noodles
  • 1 Tbsp
    olive oil
  • 16 lg
    shrimp peeled deveined and cooked
  • 1 c
    chopped cucumbers
  • 1/2 c
    bean sprouts
  • 1 lg
    carrot cut into match sticks
  • 1 c
    cilantro chopped
  • 1/2 c
    peanuts chopped
  • SPICY VINAIGRETTE
  • 1/4 c
    each lime juice fish sauce and soy sauce
  • 1 1/2 Tbsp
    sambal oelek chili paste
  • 4 clove
    garlic minced
  • 1/2 c
    brown sugar

How To Make vietnamese spicy shrimp and veggie noodle salad

    Cook the noodles according to package directions drain and run cold water over top until cool then drizzle olive oil over the noodles so they don't stick together.

    Mix the ingredients for the vinaigrette together.

    Plate the noodles first then top with veggies shrimp and peanuts drizzle the vinaigrette over the veggies and top with cilantro. Enjoy
