This is a fresh cool summer salad that packs a bit of heat. You can use any combination of veggies you want anything fresh from the garden. I have made this salad with many different kinds of veggies. Always delicious.

Ingredients For vietnamese spicy shrimp and veggie noodle salad

8 ozvermicelli rice noodles

1 Tbspolive oil

16 lgshrimp peeled deveined and cooked

1 cchopped cucumbers

1/2 cbean sprouts
-
1 lgcarrot cut into match sticks

1 ccilantro chopped

1/2 cpeanuts chopped
- SPICY VINAIGRETTE

1/4 ceach lime juice fish sauce and soy sauce

1 1/2 Tbspsambal oelek chili paste

4 clovegarlic minced

1/2 cbrown sugar
How To Make vietnamese spicy shrimp and veggie noodle salad

1Cook the noodles according to package directions drain and run cold water over top until cool then drizzle olive oil over the noodles so they don't stick together.

2Mix the ingredients for the vinaigrette together.

3Plate the noodles first then top with veggies shrimp and peanuts drizzle the vinaigrette over the veggies and top with cilantro. Enjoy
