This is an adaptable recipe. You could add chopped eggs, peas, or bacon or even change the ham to chicken or tuna! Substantial enough to be lunch, alone!

Ingredients For tomato salad

4firm red tomatoes

3/4 ccut, canned corn

1/3 cdiced cucumbers, finely diced

1/2 cchopped ham (like ham salad texture)

2 tspchopped chives
-
1/4 tspblack pepper
-
1/2 cmayonnaise
-
1 1/2 tsphorseradish, prepared

4romaine lettuce leaves, washed & patted dry
How To Make tomato salad

1Bring a pot of water to boil. Drop in tomatoes. Leave 30 seconds then immerse in cold water to peel skins off.

2Trim out the tomato core and using a spoon or melon scoop, scoop out interior. (I freeze it for later to add to soup.)

3Turn upside down to drain out juice. Mix rest of ingredients in a bowl.

4Put lettuce leaf into your salad bowl or dish or plate. Put tomato on top. Fill with salad. Serves 4
