I love this recipe! you can add all kinds of different vegetables for a different flavor. You can add ingredients to the dressing too!

Ingredients For tomato green pepper salad w/avocado

2 lgtomatoes, peeled, seeded and chopped

1 lggreen bell pepper, seeded and chopped

1 lgcucumber, peeled, seeded and chopped

4 mdgreen onions, cleaned and chopped
-
1/2 lbfresh mushrooms, cleaned and quartered
-
1 lgavocado, peeled and chopped
- DRESSING:
-
3 Tbspfresh lemon juice
-
2 clovegarlic, pressed
-
1/2 tspsea salt
-
1/4 tspcoarsely cracked pepper
-
3 Tbspolive oil, extra virgin

1/4 cminced fresh parsley or 1 tbsp. dried
How To Make tomato green pepper salad w/avocado

1Dip tomatoes in boiling water and peel. Deseed and chop tomatoes and green pepper; pieces should be no larger than 1/2 in. Chop the cucumber, green onions and avocado; quarter mushrooms.

2Mix lemon juice, garlic, salt, pepper and olive oil. Whisk until blended; add parsley.

3Fold in salad ingredients. Turn into a glass serving bowl. Cover and chill at least 1 hour.

4For Dressing try changing the parsley for cilantro or basil and maybe change the lemon juice for lime juice.
