A definite family favorite, I make this many times throughout the summer when our garden is producing grape tomatoes! I have also served this at Easter, July 4th, Memorial Day, Christmas & Thanksgiving as my family always asks me to make it! Enjoy!

Ingredients For tomato feta salad

6 cgrape or cherry tomatoes

3/4 lbfeta cheese
-
1small red onion, chopped
-
1/4 cextra virgin olive oil

3 Tbspchampagne vinegar (or white whine vinegar)

1 tspkosher salt
-
1/2 tspfreshly ground black pepper

2 Tbspminced fresh basil leaves
-
2 Tbspminced fresh parsley
How To Make tomato feta salad

1Cut the tomatoes in half & place in large bowl.

2Dice the feta into 1/4 inch dice, crumbling as little as possible.

3Add feta, chopped onion, champagne vinegar, olive oil, salt, pepper, basil & parsley to tomatoes.

4Toss carefully and salt to taste. (Sometimes feta is very salty, so may not need to salt at all).

5Serve chilled or at room temperature.
