This is a great way to use the abundance of tomatoes we grow in the summer, even the kids like this.

Ingredients For tomato, cucumber salad

  • 4 lg
    ripe, sliced tomatoes
  • 2 lg
    sliced cucumbers
  • 1 lg
    thinly sliced onion
  • 10
    fresh basil leaves, chopped
  • 1/2 c
    unseasoned rice vinegar
  • 1 Tbsp
    soy sauce
  • 1 Tbsp
    sesame oil
  • 2 Tbsp
    honey
  • 1 sm
    piece of minced fresh ginger

How To Make tomato, cucumber salad

    In a small bowl mix vinegar, soy sauce, sesame oil, honey and minced ginger. Set aside.

    In large bowl mix tomatoes, cucumbers, onion and basil leaves.

    Pour vinegar mixture over vegetables and toss well. Cover and refrigerate for at least an hour before serving.
