This is a great way to use the abundance of tomatoes we grow in the summer, even the kids like this.

Ingredients For tomato, cucumber salad

4 lgripe, sliced tomatoes

2 lgsliced cucumbers

1 lgthinly sliced onion

10fresh basil leaves, chopped

1/2 cunseasoned rice vinegar

1 Tbspsoy sauce
-
1 Tbspsesame oil

2 Tbsphoney
-
1 smpiece of minced fresh ginger
How To Make tomato, cucumber salad

1In a small bowl mix vinegar, soy sauce, sesame oil, honey and minced ginger. Set aside.

2In large bowl mix tomatoes, cucumbers, onion and basil leaves.

3Pour vinegar mixture over vegetables and toss well. Cover and refrigerate for at least an hour before serving.
