Ingredients For thai cucumber salad

  • 3 lg
    cucumbers halved seeded and sliced
  • 1 Tbsp
    kosher salt
  • 1/2 c
    sugar
  • 1/2 c
    rice wine vinegar
  • 2-3
    red chili or jalapeño peppers seeded and minced
  • 1/4 c
    cilantro, fresh chopped
  • 1/2 c
    peanuts chopped

How To Make thai cucumber salad

    Toss the cucumbers with salt in colander, drain for 30 minutes, rinse and pat dry
  • 2
    Whisk vinegar and sugar until sugar is dessolved. Add cucumbers, peppers and cilantro. Toss to combine Sprinkle. Chopped peanuts on top before serving
