I found a copy cat recipe for a Thai coleslaw I like to order at a restaurant. I've changed the recipe to suit my tastes. The original recipe has soba noodles in it,you can add them if you like. You can also use green cabbage if Napa is not available.

Ingredients For thai coleslaw

1/3 c rice vinegar

1/4 c sugar

1 t. sambal

4 t. lime juice

2 t. canola oil

1/2 t. salt

10 c napa cabbage,about 1 head

1c carrot,shredded (1 whole)

1/2 c zucchini,shredded (1/2 medium)

1 c dry roasted unsalted peanuts
How To Make thai coleslaw

1Mix vinegar,sugar,sambal,lime juice,oil and salt together. Microwave 3-60 seconds to dissolve sugar and salt. Set aside. Combine remaining ingredients well,pour enough dressing to coat salad,toss. Chill at least 4 hours or overnight.
