I use, & buy alot of cucumbers because they are always on sale and there are many ways to enjoy them. This is a easy refreshing salad and one way to use those cucumbers and this makes a excellent side salad or eaten alone is perfect too. Excellent to have on hot summer days or anytime. Ingredients For tangy cucumber and avocado salad

  • 2 medium cucumbers, cubed
  • 2 avocados, cubed
  • 4 tablespoons chopped fresh cilantro
  • 1 clove garlic, minced
  • 2 tablespoons minced green onions
  • 1/4 teaspoon salt
  • black pepper to taste
  • 1/4 large lemon
  • 1 lime

How To Make tangy cucumber and avocado salad

    In a large bowl, combine cucumbers, avocados, and cilantro. Stir in garlic, onions, salt, and pepper. Squeeze lemon and lime over the top, and toss. Cover, and refrigerate at least 30 minutes.
