This Recipe was given to me when my son was 9 years old. It is really good. Tabouli is a mediterranian salad. It goes great any meal, and keeps exceptionally well. The lightness of bulger {cracked Wheat} mixed with ripe plum tomatoes, cucumber, red onion and lots of chopped parsley makes for an extra- refreshing summertime salad.

Ingredients For tabouli salad

1 cbulgur wheat, uncooked, heaping

1 ccold water

1/2 cfresh lemon juice
-
2/3 colive oil, extra virgin

1 citalian parsley chopped
-
1/2 cred onion, diced finely

2 tspminced garlic
-
1 tspsalt
-
1 tspcoarse black pepper
-
4 lgplum tomatoes, seeded and cut in 1/2 inch slices

1 lgcucumber, peeled, seeded, cut in 1/2 inch slices
How To Make tabouli salad

1Combine bulger, water, lemon juice, and 1/3 cup of the olive oil in a large bowl. mix well, set aside for 30 minutes at room temperature.Then fluff minture with fork. Add parsley, onion, garlic, pepper, salt, and remaining olive oil. Toss well with fork, Add the tomatoes and cucumber, and toss again. Adjust the seasonings if necessary, and allow to stand loosely covered, For at least 30 minutes for the flavors to come out. Then eat and enjoy.
