sweet and tangy cucumber salad

I love cucumbers and vinegar and this is just one of the many ways I like to make it. It's a very refreshing way to start a summer meal.

Ingredients For sweet and tangy cucumber salad

  • 1/2 c
    sugar
  • 1/2 c
    hot water
  • 1/4 c
    white vinegar
  • 1 tsp
    salt
  • 1 tsp
    ground black pepper
  • 1 lg
    cucumber, thinly sliced
  • 1 sm
    red onion, thinly sliced
  • 1/2
    jalapeno pepper, deseeded and finely diced
  • 1 Tbsp
    cilantro, fresh, roughly chopped
  • crushed redpepper flakes for garnish (optional)

How To Make sweet and tangy cucumber salad

  • 1
    Whisk sugar, hot water, vinegar, salt and black pepper in a bowl until sugar has dissolved.

    Add the cucumber, onion and cilantro into the vinegar mixture and stir well.

    Refrigerate at least 1 hour.
  • 4
    Sprinkle with crushed red pepper flakes just before serving.
