Ingredients For super easy cornbread salad

  • 1 box
    jiffy cornbread mix
  • 2 c
    kraft ranch dressing
  • 1
    green pepper, chopped (or 1/2 red and 1/2 green is also good)
  • 1 md
    red onion, chopped (must be red)
  • 1 can
    whole kernel corn
  • 1 can
    red kidney or pinto beans
  • 2 md
    tomatoes, chopped
  • 2 c
    cheddar cheese, shredded
  • 1 lb
    bacon, fried crisp

How To Make super easy cornbread salad

    Prepare cornbread, bake and set aside to cool. Once cool, crumble into dish.

    Drain and mix together corn and beans. Put this over cornbread.

    Chop and mix together onion, tomato and pepper. Put this over beans/corn.

    Cover with the cheese.

    Pour Ranch dressing over this. Crumble crisp bacon over this. Cover and refrigerate overnight. It won't taste right until it sits overnight!

    You can also use Mexican cornbread and chili style beans for this recipe, if you want a spicier version. You can even throw in a bit of chopped Jalapeno!
