We have 2 blueberry bushes that produce enough to put some into a salad, plus use for other yummy delights as more become ripe!

Ingredients For summer salad with blueberries and corn

  • 1 1/2 c
    corn (freshly grilled or frozen)
  • 1 1/2 c
    blueberries, fresh
  • 1/4 c
    green onions, sliced
  • 1/4 c
    poblano pepper, minced
  • 1/4 c
    crumbled feta cheese
  • 2 Tbsp
    fresh basil, chopped
  • 3 Tbsp
    lemon or lime juice
  • 1 1/2 Tbsp
    olive oil
  • 1 Tbsp
    honey or agave syrup
  • 1 tsp
    chili powder, mild or hot
  • salt and pepper, to taste

How To Make summer salad with blueberries and corn

  • 1
    If using grilled corn, scrape kernels from ears. Otherwise, combine the corn, blueberries, cheese, poblano and basil in a bowl.

    Whisk the other ingredients together in a small bowl. Pour them over the salad and fold gently until combined.

    Best served on the day it's made.
