Ingredients For summer garden salad

  • 2 lg
    tomatoes, cut into 1/2 inch chunks
  • 1 md
    red onion, cut into 1/2 inch chunks
  • 1 lg
    cucumber , sliced and quartered
  • 1 lg
    green bell pepper, cut into chunks
  • 1/4 c
    olive oil, extra virgin
  • 1/4 c
    red wine vinegar
  • 2 Tbsp
    fresh squeezed lemon juice
  • 2 Tbsp
    chopped fresh cilantro
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper

How To Make summer garden salad

    In a large bowl, combine tomato, red onion, cucumber, and green bell pepper chunks, toss gently.
  • 2
    In a small bowl, combine oil, vinegar, lemon juice, cilantro, salt, and black pepper, whisk until well blended.

    Pour dressing into large bowl with mixed vegetables and toss gently until well combined. Serve, or cover and chill until ready to serve.
