I have picky eaters in my family but they like this cassarole. I have also subsituted other veggies in place of the squash.I always use whole wheat crackers in everything.

Ingredients For squash cassarole

5 mdyellow squash

1 smsour cream
-
8 ozcheddar cheese, shredded

1 pkgsaltine cracker crumbs

2 lgeggs
-
2 Tbspbutter, cold
How To Make squash cassarole

1Boil squash until fork tender.Pour out in to collinder. Let cool,then chop into bit size pieces.Leave in collinder to allow extra juice to drain off for a few minutes.

2Beat two eggs together.

3Crush 1/2 sleeve of saltin crackers.

4Mix 3/4 package cheese, sour cream ,eggs and crackers together. Add squash and stir.

5Pour into a medium baking dish . Dot top with butter and spread with remaining cheese.

6Bake at 350* for 30 minutes
