I have always loved a good spinach salad. But, hadn't had one for awhile. This one comes from Allrecipes. A lovely dinner accompaniment. Photo from a friend & member Kim Biegacki. The times for preparation and cooking were provided and do not account for preparing each item, like cooking bacon, toasting almonds, or boiling eggs. So, you may cook these ahead to save some time around dinner time, if you like.

Ingredients For spinach salad with warm bacon mustard dressing

  • 1
    (10 oz) bag baby spinach leaves
  • 4 lg
    eggs, hard-cooked, peeled, and sliced
  • 1 c
    sliced fresh mushrooms
  • 4
    strips crisply cooked bacon, drained and crumbled
  • 10 oz
    swiss cheese, shredded
  • 1/2 c
    toasted sliced almonds
  • 1 Tbsp
    olive oil
  • 1 lg
    shallot, minced
  • 1 tsp
    garlic, minced
  • ********DRESSING********
  • 1/3 c
    white wine vinegar
  • 1/3 c
    dijon mustard
  • 1/3 c
    honey
  • 2
    strips crisply cooked bacon, drained and crumbled
  • salt, to taste
  • pepper, to taste

How To Make spinach salad with warm bacon mustard dressing

  • 1
    Place spinach into a large serving bowl, top with sliced hard-cooked eggs, and next 4 ingredients.

    Heat olive oil, in a small skillet, over medium heat. Stir in shallots and garlic, and cook, until softened and translucent, about 2 minutes. Whisk in the vinegar, Dijon mustard, honey, and 2 crumbled strips of bacon; season to taste, with salt and pepper to taste, then cook, until hot.

    Pour hot dressing over spinach, and toss to coat. Makes 4 servings.
