Warm bacon dressing. There isn't much else to say. The dressing would make lawn trimmings appetizing. This isn't your run of the mill spinach salad. Popeye never had it this good.

Ingredients For spinach goatcheese salad with warm bacon dressing

  • 8 oz
    bacon, diced
  • 1/2 c
    red onions, finely chopped
  • 1 tsp
    garlic, minced
  • 1/4 tsp
    freshly ground black pepper
  • 1 pinch
    kosher salt
  • 1 1/2 Tbsp
    creole mustard
  • 1/4 c
    red wine vinegar
  • 2 Tbsp
    sugar
  • 1/2 c
    dried cherries
  • 1/4 c
    vegetable oil
  • 8 c
    fresh spinach, stems removed, washed and dried
  • 1 lg
    orange, segmented
  • 4 oz
    goat cheese, crumbled

How To Make spinach goatcheese salad with warm bacon dressing

    Cook bacon until crisp, transfer to paper towel and reserve 1/4 cup of the bacon fat
  • 2
    To the fat, add onioins and cook until soft
  • 3
    Add garlic, pepper and salt and cook for about 1 minute

    Add mustard and vinegar, stirring to deglaze
  • 5
    Add sugar and stir until dissolved
  • 6
    Add cherries and stir for 1-2 minutes

    Remove pan from heat, whisk in oil to emulsify, return the bacon to the pan and adjust seasoning

    Toss spinach with warm dressing, divide among 4 plates, arrange orange slices and crumble goat cheese onto salad to serve
