Trying to replicate the pea salad my son made for Easter. We can't find the original, so came up with this one. Texas twist for my A&M grad!

Ingredients For spicy texas pea salad

  • 12 oz
    frozen peas, thawed
  • 1/2 c
    finely diced red onion
  • 2 Tbsp
    cilantro, finely chopped
  • 1 - 2 Tbsp
    seeded minced jalapeno
  • 1/4 tsp
    smoked paprika
  • 1/4 tsp
    ground cumin
  • 4 oz
    smoked cheddar cheese, diced
  • 1/4 c
    lite mayonnaise
  • 2 tsp
    lemon juice or vinegar
  • salt and pepper, to taste

How To Make spicy texas pea salad

    Mix together all but mayonnaise and lemon juice. Stir them in gently and adjust for taste.
