spicy peanut quinoa salad
I like to cook the quinoa ahead. I cook a whole box with either chicken broth or with vegetable broth. Then I keep it in the fridge so it's ready whenever I want to throw together a health dish. Always use broth to make your quinoa because it makes it taste so much better. I was watching a talk show on TV and they had a chef on. He made a dish similar to this and it sounded so good, I threw together the ingredient's I thought would make a nice peanut sauce and added the quinoa and veggies. Now I make this when my kids come to town because they don't eat meat. Enjoy the taste!

1Mix the peanut butter, soy sauce, sesame oil, canola oil, rice wine vinegar and crushed red pepper flakes with a whisk

2In a separate bowl mix all the vegetables and quinoa.

3Combine the sauce with the quinoa and vegetables.
