With so much fresh corn this summer, I was yearning for something different and refreshing to create with the corn. I created this salad as a refreshing fresh, spicy treat using that sweet delicious summer corn.

Ingredients For spicy fresh corn and tomato salad

  • 8
    cobs of fresh corn shucked
  • 2
    lemons, juiced
  • 2 tsp
    salt
  • 3 Tbsp
    sugar
  • 1 tsp
    pepper
  • 1 Tbsp
    rice wine vinegar
  • 1/3 c
    olive oil
  • 1 pt
    cherry tomatoes (or a can of diced with juice)
  • 2
    jalapenos, diced
  • 1
    vidalia onion, diced
  • 1/2 tsp
    basil, chopped
  • 1/2 tsp
    cayenne pepper
  • 1 Tbsp
    horseradish, prepared
  • 2 Tbsp
    garlic, minced

How To Make spicy fresh corn and tomato salad

    Cut corn from the cob, place in a bowl.

    Add chopped onion and tomato to bowl with corn.

    Combine all other ingredients in a separate bowl, whisk together.

    Refrigerate for 3 to 4 hours
