With so much fresh corn this summer, I was yearning for something different and refreshing to create with the corn. I created this salad as a refreshing fresh, spicy treat using that sweet delicious summer corn.

Ingredients For spicy fresh corn and tomato salad

8cobs of fresh corn shucked

2lemons, juiced
-
2 tspsalt

3 Tbspsugar

1 tsppepper

1 Tbsprice wine vinegar

1/3 colive oil
-
1 ptcherry tomatoes (or a can of diced with juice)

2jalapenos, diced

1vidalia onion, diced
-
1/2 tspbasil, chopped

1/2 tspcayenne pepper

1 Tbsphorseradish, prepared

2 Tbspgarlic, minced
How To Make spicy fresh corn and tomato salad

1Cut corn from the cob, place in a bowl.

2Add chopped onion and tomato to bowl with corn.

3Combine all other ingredients in a separate bowl, whisk together.

4Refrigerate for 3 to 4 hours
