Ingredients For southwest corn salad

  • 2 can
    whole kernel corn
  • 1 can
    black beans, drained and rinsed
  • 1/2 c
    red onions, diced
  • 1/2 c
    green pepper, diced
  • 2 clove
    garlic, minced
  • 1 1/4 c
    cilantro, fresh, chopped
  • 1 c
    tomatoes, diced
  • 2 Tbsp
    real bacon bits
  • 3/4 c
    reduced fat fiesta blend cheese, shredded
  • DRESSING
  • 1/4 c
    fat free sour cream
  • 1/3 c
    low fat or fat free mayonaise
  • 1 tsp
    chili powder
  • 1/2 tsp
    cumin, ground
  • 1/2 tsp
    mrs dash southwest chipotle seasoning
  • 1/2 tsp
    mrs dash fiesta lime seasoning
  • 1/2 tsp
    salt and pepper

How To Make southwest corn salad

  • 1
    put the first 7 ingredients in a bowl
  • 2
    mix all ingredients for dressing. Let sit for 5 to 10 minutes
  • 3
    pour dressing over vegetables. Stir to coat. Add bacon bits and cheese. Refrigerate until ready to serve
