side essentials: artichoke w/optional crab, salad
This is an easy/peasy recipe to assemble, and since no cooking is required, you can have it on the table in 10 quick minutes. This is an excellent salad to serve with fish; however, it works well with beef, and chicken. As a matter of fact, you could make it a bit bigger, and serve it as a complete meal. So, you ready… Let’s get into the kitchen.

1PREP/PREPARE

2There are many varieties of artichokes out there; some come in cans, and some come in glass jars. What you want are marinated artichokes. The marinade usually consists of oil, vinegar, citrus, and a few other assorted spices. Marinated artichokes almost always come in a glass jar… at least the good ones do. My favorite brand is Cento Artichoke Hearts, Quartered and Marinated, 6 oz jar.

3In addition to lump crab meat, I have made this dish with tuna, but only if it is Wild Planet brand. https://www.wildplanetfoods.com

4Gather your ingredients (mise en place).
-
5Layer two plates with butter lettuce, or lettuce of choice.
-
6Drain the artichokes, and divide between the two plates, then add the lump crab meat, if using.
-
7Add a drizzle of extra virgin olive oil.
-
8Add a bit of balsamic vinegar, or glaze.
-
9Chef’s Note: If you have a balsamic glaze, use it in place of the straight vinegar. Being thicker, it clings to the ingredients; giving a better presentation.
-
10Toss on some parmesan shavings, and add a few grinds of fresh black pepper.
-
11PLATE/PRESENT
-
12This works great as a side salad for just about anything; but especially for seafood. Enjoy.

13Keep the faith, and keep cooking.
