Ingredients For shrimp and mango salsa salad

  • 1
    mango
  • 1 c
    diced tomato
  • 1/3 c
    diced red onion
  • 1/2 c
    chopped cilantro
  • 1 Tbsp
    olive oil
  • 1/4 tsp
    cumin
  • 1
    lime
  • 1
    jalapeno, finely diced (optional)
  • 12 oz
    cooked frozen medium to large shrimp, thawed and drained
  • 1 tsp
    salt
  • 4 c
    mixed spring greens

How To Make shrimp and mango salsa salad

  • 1
    Peel and cut mangos into 1/2 inch cubes.
  • 2
    Mix with tomatoes, onion and cilantro. Add olive oil, cumin, juice from the lime and jalapeno. Fold in shrimp.

    Mix well and adjust taste with salt and pepper. Serve chilled over spring greens.
