1/2 ctoasted pecan pieces

1 1/2 lbbrussels sprouts, trimmed

6 Tbspmayonnaise

3 Tbspdijon mustard

2 Tbsphoney
-
6 Tbspcoconut oil

1 tsporange zest, grated
-
1/4 cchampagne vinegar
-
2 Tbsporange juice
-
salt and pepper to taste

1/4 cdried cherries or cranberries - can use pomegranate seeds

1Preheat the oven to 375 degrees. Place the pecans in a single layer on a baking sheet and bake for approx. 6-8 min. or until golden.

2Using a grater, shred brussels sprouts using the large holes - chop any remaining pieces that are left.

3Mix together the mayo, mustard, honey, coconut oil and orange zest in a large bowl - combine well. Add the brussels sprouts and toss to combine. Season with additional salt and pepper to taste.

4Transfer to a serving bowl and top with dried cherries. Refrigerate several hours before serving.
