When I was superintendent of schools, the wonderful cafeteria staff at Scotts Hill High School would serve this recipe on "special occasions". I just couldn't wait to get there for the meal! Mrs. Fisher, the cafeteria manager, shared the recipe with me, and it is always one of my son's favorites.

  • 8 c
    broccoli florets (about 5 bunches)
  • 1 lb
    cooked and crumbled bacon (not thick)
  • 1 c
    diced red onions
  • 2 c
    raisins
  • THE NIGHT BEFORE, MIX TOGETHER THE FOLLOWING INGREDIENTS. SEAL AND REFRIGERATE OVER NIGHT:
  • 1 1/3 c
    mayonnaise
  • 3 Tbsp
    white vinegar
  • 1/2 c
    sugar

    MIX TOGETHER THE 4 SALAD INGREDIENTS. POUR THE DRESSING MIXTURE OVER THE SALAD AND SERVE. (I LIKE TO CHOP THE BROCCOLI AND ONION THE NIGHT BEFORE AND REFRIGERATE. ON THE SERVING DAY, I COOK, DRAIN, AND CRUMBLE THE BACON; THEN I ADD IT AND THE RAISINS TO THE VEGETABLES. IT'S FRESH AND READY FOR THE DRESSING!)
