My Momma used to make this several years back. We fell in love with it, since we make our own kraut & grow all the other veggies, except celery. There is no kraut taste in it. We've made it ever since then. If you don't like kraut, give this a try. There is no kraut taste in it.

Ingredients For sauerkraut salad

2 1/2 c*kraut, drain slightly

1 smjar pimentos

1green bell pepper
-
1 bunchgreen onions (4 or 5)

3celery (ribs)

*i used 3 pints of homemade, by the time i drained the juice.
- DRESSING

1 tspcelery seeds
-
1 csugar
-
1/2 cwater
-
2/3 cvinegar
-
1/3 ccanola oil
How To Make sauerkraut salad

1DRAIN KRAUT. MIX IN WITH CHOPPED ONION, CHOPPED CELERY, CHOPPED PEPPER, & PIMENTOS & SET ASIDE.

2MIX DRESSING INGREDIENTS IN SAUCEPAN & BRING JUST TO A BOIL, SO SUGAR IS DISSOLVED. POUR OVER FIRST MIXTURE WHILE STILL HOT IS FINE, & REFRIGERATE OVERNIGHT. WILL KEEP ALMOST INDEFINATELY.
