This comes from my mother's collection of old recipes. I thought I share this recipe,since we are in Lent Season. It makes a good lenten Friday's simple supper.

Ingredients For salad salmon sandwich

115 1/2 oz can salmon,dran,boned, & flake

3/4 cminced celery
-
1/2medium cucumber (or 1 small cucumber) chopped

1 Tbspminced onion

3/4 cmayonnaise (can substitute light mayonnaise)

1 Tbspfresh lemon juice
-
2 Tbspdijon, or spicey mustard
-
1/4 tspdill weed, or add less or more to preferred taste

3 lghard boiled eggs
-
1/8 tspground nutmeg
-
optionaldill fans for garnish

light rye bread lightly buttered/or any type of thick bread (may lightly oven toast if wish to do so)
How To Make salad salmon sandwich

1Blend Salmon,cucumber,celery,eggs, and onion together.

2While in a seperate bowl blend mayonnaise, dill weed,nutmeg, mustard, and lemon juice.

3Combine mayonnaise mixture into the Salmon Mixture. Toss gently to blend well. Cover and chill.

4To Serve. Place lettuce leaves on half of bread slickes. The other half of bread slice spread on thick the salmon mixture. Close sandwich and garnish with dill pickles fans (optional).
