rose mary's broccoli & raisin salad

This Family Favorite recipe is in my Self Published Cookbook, & has been a long time family Favorite for many years. It is quite simple & easy to make, & the longer you let it sit the better the flavor comes through. Having fiber in the diet is important, & this is a tasty way to add some in. My husband suggested I make this for the holiday, to compliment the Beef Ribs he smoked on the grill. I didn't even realized that I had not shared this recipe until he mentioned it. He and my daughter loved this salad very much. For extra crunch, texture & color try adding in some shredded carrots.

Ingredients For rose mary's broccoli & raisin salad

2 bunchbroccoli, washed & cut up into bite size pieces

1 smred onion, chopped, i used vidalia

1/2 craisins, i used twice as much

3/4 csunflower seeds
-
1 lbregular or turkey bacon, cooked crisp and crumbled
-
1 cmayonnaise (regular or light)

1/2 csugar or splenda
-
4 Tbspapple cider vinegar
How To Make rose mary's broccoli & raisin salad

1The broccoli yield about 5 cups when cut into bite size pieces. Pour into a large bowl.

2These are some of the main ingredients used for the salad.

3Cut onion into quarters then eights, and process in a food processor into small pieces. The onions takes on the flavor of the smoked bacon. They marry well together.

4Now add the chopped bacon and onion mixture to the bowl of broccoli flowerettes. Add in the sunflower seeds as well.

5Stir to mix together.

6Add the mayonnaise, sugar or splenda and apple cider vinegar to a medium size bowl and whisk or beat together till blended.

7Mixture should be creamy and smooth. I added the raisins also to the salad dressing and allowed them to absorb the flavor and moisture of the dressing for about 10 minutes.

8Now pour salad dressing mixture over the broccoli and stir to blend together. If time permits allow to sit and flavors marry before serving. About 1/2 hour to 45 minutes.

9Stir just before serving. Then serve and enjoy.
