Ingredients For roasted red pepper salad

  • 4 lg
    tomatoes, chopped
  • 1 lb
    mozzarella cheese, cubed
  • 1/2 c
    jarred roasted red peppers, chopped
  • 8-10
    fresh basil leaves, chopped
  • 1/4 c
    olive oil
  • 1 clove
    garlic, minced
  • 1/2 tsp
    coarse sea salt
  • black pepper, freshly ground
  • 1/2 lb
    salami, sliced thin (optional)
  • 1/2 c
    olives, your choice

How To Make roasted red pepper salad

  • 1
    Combine tomatoes, cheese, peppers, salami, olives and basil in a large bowl. Mix olive oil with garlic, salt and pepper; drizzle over tomatoe mixture and toss gently.
