Ingredients For rice salad with green peppercorn dressing and smok

1 csmoked turkey, diced

3 ccooked long grain rice

1/2 csweet red or yellow bell pepper, diced

1/2 czucchini, diced

1/2 ccheddar cheese, shredded

1/2 cripe olives, chopped

1/4 cfresh parsley, minced (i like to use cilantro)

3 Tbspred wine vinegar
-
1 Tbspgreen peppercorns

1 tspdijon mustard

1/2 cplus 1 tablespoon olive oil
How To Make rice salad with green peppercorn dressing and smok

1Combine the first 7 ingredients in a bowl. Mix gently. Set aside.

2Combine the vinegar, peppercorns, and mustard in a mini food processor; process for 30 seconds, stopping once to scrape down the sides.

3Gradually add the olive oil and process until blended. Pour the dressing over the rice mixture, and mix gently.

4Cover and chill.
