Excellent corn salad, easy and common ingredients. First time I made this, for family and house guests, everyone enjoyed this salad.

Ingredients For ranch corn salad

  • 2 can
    corn, well drained, or 12 oz frozen thawed and well drained
  • 1
    green bell pepper, diced
  • 1
    red bell pepper, diced
  • 1/4 c
    fresh cilantro, chopped
  • 1/4 c
    spring onion greens, sliced
  • 2
    spring onions, white part only, sliced
  • 1/2 c
    ranch dressing
  • 1 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1/2 tsp
    italian seasoning
  • 1/4 tsp
    onion powder

How To Make ranch corn salad

    Drain the canned corn in a colander. If using frozen corn, thaw at room temperature in a colander for about 30 minutes. Add the corn to a large mixing bowl.

    Add the bell peppers, spring onion greens, and cilantro. Mix together.

    In a bowl, add the ranch dressing, salt, Italian seasoning, onion powder, and black pepper. Stir to mix together.

    Pour dressing over the corn mixture and mix together.

    This can be served immediately or covered and placed in the fridge to chill for up to 4 hours before serving (giving it another stir when served to mix in any liquid that collects at the bottom. Enjoy.
