quinoa salad
This is my favorite go-to salad for lunch. It's easy to make and has ingredients which are a good source of iron. You can substitute roasted red peppers for the tomatoes if you prefer.

Ingredients For quinoa salad

1 cquinoa

1 chalved grape tomatoes

1zucchini, diced

1 canchickpeas, drained

1 cbaby spinach

5 ozfeta cheese, crumbled
- THE DRESSING

1/2 colive oil
-
3 Tbspred wine vinegar
-
1 tspitalian seasoning
-
2 tspdijon mustard
-
2 clovegarlic, pressed

1/2 tspkosher salt
-
1/4 tspground black pepper
How To Make quinoa salad

1Prepare the dressing. In a mason jar with a tight lid, combine olive oil, vinegar, Italian seasoning, garlic, mustard, salt, and pepper. Set aside.

2Prepare Quinoa according to package directions.

3In a large bowl, combine Quinoa, spinach, zucchini, tomatoes, chickpeas, and feta. Pour dressing over the salad and combine. Can serve at room temperature or let it sit in the refrigerator to let the flavors meld and serve the next day.
