This is my favorite go-to salad for lunch. It's easy to make and has ingredients which are a good source of iron. You can substitute roasted red peppers for the tomatoes if you prefer.

Ingredients For quinoa salad

  • 1 c
    quinoa
  • 1 c
    halved grape tomatoes
  • 1
    zucchini, diced
  • 1 can
    chickpeas, drained
  • 1 c
    baby spinach
  • 5 oz
    feta cheese, crumbled
  • THE DRESSING
  • 1/2 c
    olive oil
  • 3 Tbsp
    red wine vinegar
  • 1 tsp
    italian seasoning
  • 2 tsp
    dijon mustard
  • 2 clove
    garlic, pressed
  • 1/2 tsp
    kosher salt
  • 1/4 tsp
    ground black pepper

How To Make quinoa salad

    Prepare the dressing. In a mason jar with a tight lid, combine olive oil, vinegar, Italian seasoning, garlic, mustard, salt, and pepper. Set aside.

    Prepare Quinoa according to package directions.

    In a large bowl, combine Quinoa, spinach, zucchini, tomatoes, chickpeas, and feta. Pour dressing over the salad and combine. Can serve at room temperature or let it sit in the refrigerator to let the flavors meld and serve the next day.
