I was experimenting with quinoa and just threw all of this together. All my friends ask me to bring this to potlucks and have asked for the recipe.

Ingredients For quinoa salad

1 cquinoa

2 cwater
-
1 lgzucchini
-
1 pkgfresh sliced mushrooms

1 canartichoke hearts
-
1 jarsliced green olives

1 Tbspolive oil, extra virgin

1 Tbspgreek seasoning
How To Make quinoa salad

1Rinse quinoa well before cooking, then boil in the 2 cups of water for 15 minutes, cover and simmer until all water is absorbed. Refrigerate quinoa.

2Dice zucchini, sautee in olive oil and greek seasoning. When zucchini is almost done add artichokes and mushrooms.

3Mix vegetables with quinoa. Drain and add green olives if desired.

4Can be served hot or cold.
