My entire family and many coworkers love this salad. It has many textures and flavors that blend well. We have many special diet needs at home and work. Diabetics, vegans, picky eaters, this seems to please them all.

Ingredients For quinoa salad

1 cquinoa, cooked
-
1 smred bell pepper
-
1 smred onion
-
1 bunchcilantro, fresh
-
1 ccorn kernels, frozen
-
3 stickcelery stalks
-
1 cedamame
-
1/2 cfeta cheese
- DRESSING
-
1/4 colive oil, light
-
1/4 tspcrushed garlic
-
2 Tbsplime juice
-
1 dashsalt and pepper
How To Make quinoa salad

1Cook quinoa according to directions and allow to cool.

2Finely chop red bell pepper, red onion, celery stalks and cilantro into a large bowl

3Add corn and edamame, toss in bowl with rest of vegies and add quinoa.

4Mix olive oil, garlic and lime juice together very well. Salt and pepper to taste.

5Pour dressing over salad and mix. Place in fridge until chilled.
