I love this refreshing, salad chilled, all the wonderful flavors pop and sing in your mouth. Who knew, this would taste so great. The fragrant herbs, crunchy peanuts, fish sauce and fresh lime juice add a wonderful depth of flavor to the dish creating a perfect balance of sweet, sour, salty and hot.

2 1/2 - 3 Tbsplime juice, fresh squeezed

2 cleftover chicken, shredded

2 ccabbage, shredded

1/4 conion, finely shredded

2 -3 smcarrot, grated

1/4 cfresh mint, finely chopped

2 - 4 Tbsproughly chopped salted peanuts, garnish
How To Make quick chicken & herb salad

1Salad Dressing: In a small bowl, combine all the salad dressing ingredients, mixing well. Taste the dressing to see if it needs more seasonings, adjust if necessary and then set aside until needed.

2Next, add the salad ingredients and salad dressing to a large bowl and toss together, then garnish with peanuts and serve.

3This salad is wonderful when served either chilled or at room temperature.
