Had a partial head of cabbage from the garden and a Honeycrisp apple that needed to be eaten or used. So I threw things together and Hubby and I had some slaw for a dinner side dish.

Ingredients For pam's fruity coleslaw salad

1/4solid medium head of cabbage, grated on large holes of box grater about 2 to 3 cups

1/2 to 1 mdhoneycrisp apple, seeded and grated on large holes of box grater. about 1 cup

1/4 to 1/3 craisins (softened in warm water and drained, if desired) i like them chewy.

1/4 to 1/3 cdried mixed fruit bits ( chop to 1/2 inch or less)

2 to 4 tspfresh lemon juice

1 to 2 Tbspwhite wine vinegar

1 to 2 Tbspsugar cinnamon mixture ( 3 tbsp sugar to 1 tbsp cinnamon mixed)

1/4 to 1/3 cmayonnaise

1 to 2 pinchsalt to taste

1/4 ccool whip or sweetened whipped cream
How To Make pam's fruity coleslaw salad

1Shred cabbage and apple, place in sm/med mixing bowl. Add raisins and fruit bits and stir.

2In a small bowl, mix 1/4 c. mayonnaise, 2 tsp lemon juice, 1 Tbsp. vinegar, 1 Tbsp cinn/sugar and a pinch or two of salt together. Add to cabbage mixture and stir well. Taste and adjust the sweet and sour flavors to your liking. Add more mayo or vinegar if slaw needs more dressing. Remember that you will fold in sweetened whip cream or CoolWhip to finish.

3Fold in CoolWhip or whipped cream and serve.
