Ingredients For orange sweet potato and quinoa salad

1 cquinoa

2 cwater

1 lgsweet potato

4 Tbspfresh orange juice

2 Tbspolive oil

2 Tbsplemon juice

1/2 tspsalt

1/2 tspblack pepper

2 lgoranges, divided into wedges

2 cspinach, fresh

1/2 cwalnuts, chopped
How To Make orange sweet potato and quinoa salad

1Bring water to a boil. Add quinoa and reduce heat to a simmer and cover. Cook until quinoa is tender and all water is absorbed (about 15 minutes). Remove from heat and cool.

2Place sweet potato in a microwaveable dish and pierce multiple times with a knife. Microwave on high until soft (about 10 minutes). Peel and cut into roughly 3 inch chunks.

3In a large bowl whisk together orange juice, lemon juice, oil, salt and pepper. Add quinoa, sweet potato, orange wedges and spinach. Toss to combine. Top with walnuts.
