This was my grandmother Jeannie's Tomato Salad from Senatobia, Mississippi. We all knew that summer was in full swing when the tomatoes were good enough for this salad. Everyone I have ever served it to loves it. It is so easy, quick and pretty to serve - and cheap too, I might add. Oh and it really is not nearly as good without really ripe, good summer tomatoes.

Ingredients For old fashioned tomato salad

  • 2 lg
    ripe home grown tomatoes diced small
  • 1/2 md
    sweet onion such as a vidalia chopped fine
  • 2 Tbsp
    mayonaise.. i prefer hellman's
  • pinch
    salt

How To Make old fashioned tomato salad

  • 1
    Chop tomatoes and onion and mix together in bowl with mayonaise and salt - so that the liquid from the tomatoes joins with mayo to make a pinkish sauce. Add salt to taste and set aside until time to eat.

    At last minute crumble the saltines on top of the salad and mix and eat right away. This salad does not hold up for a long time because the saltines need to be crisp. It is best when eaten just as the crackers are added. I have often made it in individual bowls and placed three saltines on the side or on top for each person to add when they are ready to dig in. Yum Yum
