My Brother made this for Thanksgiving, he used fresh cactus paddles (abt 5-6). But I use the cactus from the jars, to save alittle time, and a couple of steps. We thought both ways were great.

Ingredients For nopalitos salad

  • 2 jar
    (30oz) of cactus, (nopalitos), drained and rinsed.
  • 1-2 Tbsp
    lime juice
  • 2 Tbsp
    olive oil
  • 1 Tbsp
    water
  • 1/2-1 tsp
    cider vinegar
  • 3 Tbsp
    sugar
  • 1/2 tsp
    oragano
  • 1 can
    diced tomatoes, well drained
  • 1 clove
    garlic, minced
  • 1 md
    yellow or orange bell peppers, chopped
  • 1/2 sm
    red onion, sliced thin

How To Make nopalitos salad

    Place cactus to colander,remove the pepper and onion from the jars, rinse under cold water, strain well. Set aside
  • 2
    In a medium bowl, whisk lime juice, oil, water, vinegar, sugar, oregano together.

    Slice the red onion into thin slices, drain the tomatoes well. Combine the cactus, onion,tomatoes and the dressing together and mix well.
