Ingredients For noodle veggie salad with miso dressing

  • 8 oz
    vermicilli noodles
  • 1 c
    broccoli cut into small florets
  • 1 Tbsp
    sesame oil
  • 1
    head cabbage cut into thin strips
  • 2 lg
    carrots cut into matchsticks
  • 1
    cucumber cut into chunks
  • 1/3 c
    cilantro chopped
  • 2 tsp
    black and white sesame seeds
  • sea weed
  • MISO DRESSING
  • 2 Tbsp
    each white miso,honey, & olive oil
  • 1 Tbsp
    rice vinegar , lemon juice
  • 1 clove
    garlic minced
  • 1 tsp
    ginger grated
  • salt and pepper

How To Make noodle veggie salad with miso dressing

    In a medium saucepan boil some water and add the rice noodles and broccoli and cook about 4 minutes. Drain and run under cold water. Toss with the sesame oil.

    Combine the noodles, broccoli, cabbage, carrots, cucumber and cilantro.

    Mix all the ingredients together for the dressing and mix well. Pour over the salad. Sprinkle with sesame seeds and sea weed.
