1/4 cwhite wine vinegar

3/4 colive oil

fresh ground black pepper to taste

1head of lettuce chopped or torn into bite size pieces

1 cgrape tomatoes

1 csliced cucumbers

1/2 csliced radishes

1 cnicoise olives

1/2 lbtrimmed and blanched green beans

3hard boiled eggs peeled and sliced in half lengthwise

3/4 lbsmall red potatoes boiled and cooled

2cans (7 ounce) white albacore tuna
How To Make nicoise salad

1In a medium bowl whisk together wine vinegar, minced shallots, dill and mustard. Drizzle in the olive oil while whisking continuously. Season with fresh ground black pepper to taste.

2Top platter or plates with lettuce, tomatoes, cucumber slices, sliced radishes, Nicoise olives, green beans, halved eggs, halved potatoes and tuna. Drizzle with mustard vinaigrette and serve promptly.
