This is a summer delicacy. It must be made with only the freshest of ingredients. Sun drenched tomatoes and basil from your garden. Years ago when I first started making this salad I used regular mozzarella, I have since learned about fresh mozzarella and what a difference it makes in this salad. I garnish with a few of the marinated olives I keep on hand in the refrigerator. This salad is a nice lunch with a good bread.

Ingredients For mozzarella caprese

fresh sliced garden tomatoes

fresh mozzarella, sliced

fresh basil leaves

olive oil, extra virgin

kosher salt and freshly ground black pepper
How To Make mozzarella caprese

1Slice tomatoes and arrange on serving platter or individual plates. Sprinkle with salt and a few grinds of pepper, top with a slice of fresh mozzarella and a basil leaf. Drizzle with olive oil and serve.

2Add marinated black olives as a garnish if desired.
