Mom has made this for years just throwing the ingredients together without measuring. It always comes out yummy! I've made it the same way, until friends started asking how to make it. So here is my attempt at a recipe to share, so you can enjoy it too. My boys love the egg salad and sometimes like to eat it right out of a bowl, instead of having it on sliced bread. My step son has also asked for the recipe.

Ingredients For mom's egg salad

  • 1 dozen hard-boiled eggs
  • 1 Tbsp
    prepared yellow mustard
  • 1 Tbsp
    dill pickle juice
  • 2 to 3 Tbsp
    chopped onion
  • 1/3 c
    mayonnaise

How To Make mom's egg salad

    In a large pot place your eggs in a single layer with enough cool water to cover them. Bring them to a boil. Let them boil for five minutes, then remove from heat. Run cool water over them to cool them. Drain, and then remove the egg shells. Using a large bowl, cut/slice the eggs into small pieces. I have an egg/strawberry slicer that helps with this step.

    Add mustard, dill pickle juice, chopped onion and mayonnaise to the eggs and mix well with a large spoon or scraper.

    Add salt and pepper to taste. You can use more or less of the onion to your desired taste. This recipe works well for my family...Enjoy!
