Ingredients For mexican brussels sprout slaw

  • 1 1/2 lb
    brussel sprouts, finely shredded
  • 1/3 c
    uncle gary's gourmet peppers
  • 1/2 c
    mini colorful peppers, julienned
  • 1/4 sm
    red onion, chopped
  • 2
    garlic colves, minced
  • 2 Tbsp
    cilantro, chopped
  • 4 oz
    queso fresco, crumbled
  • MEXICAN DRESSING
  • 2/3 c
    mayonnaise-more if needed
  • 1 tsp
    cumin
  • 1/2 tsp
    chipotle chili powder
  • 1 1/2 tsp
    smoked sea salt-to taste
  • 1 tsp
    brown sugar
  • zest and juice of 1 lime

How To Make mexican brussels sprout slaw

  • 1
    Combine ingredients 1-6 in a mixing bowl. Mix dressing ingredients in a small mixing bowl and add to veggies. Mix well and chill for at least 1 hour. When ready to serve, top with queso fresco. **adjust seasoning to taste**
