Great recipe to use up zucchini from your garden. I also love that the salad is heartier than most and can be used for a lunch serving! Prep time includes 2 hours marinating time.

Ingredients For marinated zucchini and bocconcini salad

12 ozbocconcini (fresh mozzarella balls)

1 lgtomato, cut into 6 slices

1 mdzucchini, cut into 1/4 inch slices

1/4 cvegetable oil

1/4 cwhite vinegar

1 Tbspfresh basil, chopped

1 clovegarlic, chopped

1/2 tspsugar

1/4 tspsalt
How To Make marinated zucchini and bocconcini salad

1Arrange the Bocconcini in a single layer in an 8-inch square dish. Place the tomato slices on top of the cheese; top with the zucchini slices.

2Combine the vegetable oil, vinegar, basil, garlic, sugar, and salt in a jar; cover tightly, and shake vigorously. Pour the dressing over the zucchini mixture.

3Cover and marinate in the refrigerator for 2 hours.
