marinated cucumbers & onions
My husband and I enjoy these by themselves, mixed with tomatoes, or placed on top of a mixed green salad.

Ingredients For marinated cucumbers & onions

2english cucumbers

1yellow onion

2 Tbspsalt

1/2 cwater

1/2 capple cider vinegar

1/3 csugar

pepper, to taste (optional)
How To Make marinated cucumbers & onions

1Peel & thinly slice cucumbers & onions.

2Place the cucumbers in a colander on a plate. Sprinkle with 1 T of salt. Place onions on top of cucumbers and sprinkle with 1 T of salt.

3Place in refrigerator or cover with plastic wrap and place a freezer pack on top for 2 hours.

4Meanwhile, place water, vinegar & sugar in a small pot and heat until sugar is dissolved. Remove from heat & allow to cool.

5After 2 hours, squeeze as much liquid as possible from the cucumbers & onions as possible. Place in a bowl, season with pepper, if desired, and pour marinade mixture over them. Refrigerate.

6Remove from marinade to serve.
