We love legumes and just about any kind of bean....also love curry so this is a fav of ours..this is also a heart smart recipe....this is the year for "No excuses"!!We eat great but we r going to do better!!

Ingredients For lemon-curried black-eyed pea salad

1 can15 oz black eyed peas drained and rinsed well

1 can11 oz no-salt added corn rinsed and drained

1/2 cchopped red onion

1/2 cthinly sliced celery about 2 stalks

1 tspfinely shredded lemon peel
- DRESSING

2 Tbspfresh lemon juice
-
1 Tbspwater
-
1 tspolive oil, extra virgin

1 cloveminced garlic
-
1/2 tspcurry powder
-
1/2 tspdijon mustard

1/8 tspfresh pepper
How To Make lemon-curried black-eyed pea salad

1In a medium bowl, combine salad ingredients. set aside. Mix dressing in a jar or blender and shake or blend. Pour dressing over salad and stir until well coated. Refrigerate for 1-24 hours.Delicious!
